3 tablespoons olive oil
1 packet Lamb Bacon
1 onion, finely chopped (optional)
3 green peppers, chopped
4 cups chopped tomatoes or canned tomatoes
4 cloves garlic, sliced (optional)
3 spring onions, 2 for cooking and 1 for the garnish
1/2 teaspoon salt
6 free-range eggs
1/4 teaspoon black pepper
Parsley for garnish
Heat pan on medium and add in olive oil. Add green peppers, onion and lamb bacon (diced), cook until tender
Add tomatoes and garlic and stir while simmering for around 10 minutes until the mixture thickens, then sprinkle salt over the top. .
Hollow out area for each egg and break egg into the empty space.
Leave it uncovered and let it simmer for around 8 minutes or until egg is cooked to your liking then sprinkle pepper over the top.
Use remaining spring onions and mint as a garnish.
Serve in the pan with Turkish Bread
